Slow Loop Iced: A Cold Brew for Warm Days
Cold brew forgives almost everything except impatience. Coarse grounds, cold water and time do the work while you sleep.

Cold brew is the most forgiving way to make good coffee. There is no temperature to hit, no pour to control, no timer counting down while you make decisions. You combine coffee and cold water, wait, and strain. The chemistry does the rest.
Because the water never gets hot, it extracts differently. Many of the sharper acids and bitter compounds simply do not come out at room temperature, which is why cold brew tastes rounder and sweeter than iced coffee made from a hot brew. Slow Loop is ideal for it. The dark chocolate and jaggery notes turn syrupy in cold water, and the small proportion of robusta gives the concentrate real body over ice.
Grind coarse, roughly the texture of raw sugar. Too fine and the long steep will over extract, leaving something muddy and drying. Use a ratio of one part coffee to ten parts water by weight if you want a concentrate you can dilute, which is what we recommend. It keeps well and gives you options.
Twelve hours in the fridge is our default. Fourteen if you want it heavier, ten if you prefer it lighter and more tea like. Beyond about eighteen hours the gains stop and a woody edge creeps in, so set a reminder rather than leaving it a whole day.
Straining is where most people rush. Pour through a fine mesh sieve first to take out the bulk of the grounds, then through a paper filter for clarity. It takes a few extra minutes and the difference in texture is obvious. If you like a heavier mouthfeel, skip the paper stage.
Serve one part concentrate to one part cold water over plenty of ice, or one to one with milk for something closer to dessert. A pinch of salt sounds strange and works beautifully, softening any remaining bitterness. Keep the concentrate in a sealed bottle in the fridge and use it within a week.
